Jamaican sweet potatoes made an excellent addition to Jamaican soups or Jamaican sweet potato pudding. They are now one of the main crops grown in the Caribbean, with Jamaica and Haiti being the largest producers.
The sweet potatoes grown in Jamaica are not orange, but red-skinned and white or yellowish inside. Regarding texture, they are more starchy and dry than their orange counterparts.
